Recipe: Pig’s Feet with Ginger in Black Vinegar

Excerpt from The Wisdom of the Chinese Kitchen:

In Cantonese tradition, a new mother eats chicken wine soup for the first ten days after giving birth. Then for the rest of the month, the mother-in-law makes pig’s feet and ginger in black vinegar, which are said to help the mother produce more milk for the baby. The eggs in this dish are a symbol of birth and life, and the ginger helps to reinvirograte the mother’s body. To make this correctly you must peel the ginger which takes incredible patience.

All relatives and friends who come to visit the new baby are also treated to the pig’s feet, for pots and pots of this are prepared. I distinctly recall having it many times as a child and loving it. The black vinegar and sweetened black vinegar are found in Chinese supermarkets…

Update: Baby #2

It took a little bit longer than we expected, but we came home last night with our second daughter. Mommy GeezLouies pushed the hardest she’s ever pushed due to the head facing the wrong direction. But with the help of the midwife and birthing assistant, Mommy G. was able to push to the end.

Like she said after the delivery… the whole labor process seems to fade away after the arrival of the baby. Which is true. The eight+ hours just seemed to be forgotten as the surreal moment of seeing the new baby emerge.

Update: Where to go? and a lesson in leadeship

Update
Been a hectic week. Started off in springfield, then centreville, then back and forth. There were some strange nights. We had a false alarm. Mommy was getting some stomach cramps/contractions/something. Ended up with nausea and diarrhea. We thought it was time. But still no word. Went to the doctors yesterday and everything seems fine.

On other news, we moved back in. Our house is practically 99% operational. There are little things that could be fixed, but we could live with as well.

Leadership
Last week, I attended a seminar on leadership. A leader is someone who leads… Something my pastor said was interesting. A leader has followers, if you think you are a leader but have no followers, then you are deceiving yourself.

My pastor expounded from Joshua 1 where there is a transition in leadership. Moses led the people out of Egypt and through the wilderness. Joshua is next and takes up the mantle to lead the people across the Jordan and into the promised land. “Be strong and courageous” is the words given to Joshua because he is going to make big decisions that will affect all of Israel.

I think it was a good reminder for me to read that passage again because the call to be strong and courageous isn’t something we can muster out ourselves… the passage continues in v. 9, “Be strong and courageous. Do not be terrified; do not be discouraged, for the LORD your God will be with you wherever you go.” There is a promise. the God of the universe, the God of creation, the God of your forefathers… will be with you wherever you go. That promise is comforting especially when other people’s lives are in your hands.

As a reminder, you are called to be in whatever position of life you are in. Be faithful in the little things and you will be entrusted with much.

As a leader where do you go? You lead by following the Lord Jesus Christ.
